Our goal is to help connect people to place, through regenerative ranching, humane butchering, whole-animal cooking, and of course, through sharing meals that celebrate local bounty. Goat, cabrito, chevon, or chivo is the most popular red meat consumed globally and we know why. Cooked over an open fire and coals, smoked, barbecued, or slow cooked in an oven or in the earth, traditions abound when it comes to cooking goat.
